Chef Scott Iijima is a Japanese/Korean chef born and raised in Hawaii, now calling Portland home for the past 10+ years. His work is shaped by a mix of island upbringing, cultural heritage, and years of collaborative menu development and event coordination with Han Oak’s restaurant group.

Through Hiori, Chef Scott brings yoshoku cooking (Japanese/ Western-style comfort food) into a pop-up format—reimagining familiar dishes with seasonal ingredients, playful technique, and personal storytelling at the center of the experience. The name Hiori draws from the ideas of hibiki (響き) and nagori (名残), guiding dishes that echo familiar comforts while leaving a gentle, lasting impression beyond the last bite.”
